PRIMARY PURPOSE:

Responsible for providing leadership, oversight, and integration of all directives developed through the COE Food & Beverage strategy for the MGM Grand, Excalibur, NYNY and Signature Food & Beverage Division. In Collaboration with the COE of F&B Strategy will execute on the strategic direction of both the Food & Beverage functions, encompassing a combination of high volume and gourmet dining outlets, lounges, beverage, catering and banquets, in-room delivery, kitchens, stewarding, and any other food & beverage related areas, as well as collaborating with partner venues. Accountable for the oversight and leadership of all staffing, Guest Service Initiatives and Employee Engagement, and ownership of all profitability of F & B Division. All duties are to be performed in accordance with departmental and property policies, practices and procedures.

PRINCIPAL DUTIES AND RESPONSIBILITIES:

  • Collaborate and Execute on all Food & Beverage Strategic Initiatives as determined by COE of F & B Strategy and ensure sustainability of initiatives.
  • Oversee implementation of policies, operating procedures, training programs, manuals, directives, menus, work schedules, rules and regulations for all F & B staff and ensure full compliance.
  • Drive employee engagement through coaching, training, and development.
  • Continue to improve guest experience by controlling food and service quality for the property.
  • Utilize resources provided by COE’s to drive financial success to include managing sales, drive profits, manage labor, and control expenses.

MINIMUM REQUIREMENTS:

  • Bachelor's degree in a related field, or equivalent experience
  • Six (6) or more years prior relevant experience

CERTIFICATIONS, LICENSES, REGISTRATIONS:

  • Alcohol Awareness Card-AES.
  • Food Handler Card-Southern Nevada Health District.
  • Metro Non-Gaming Card-1-Position Required.

KNOWLEDGE, SKILLS, AND ABILITIES:

  • In-depth knowledge of all disciplines within the F & B division to include implementation of branding strategy, sourcing, warehousing, distribution, cost controls and regulatory standards & compliance across all outlets.
  • Ability to effectively achieve business unit goals and objectives by implementing strategic and operational plans, budgets and best practices; and monitoring and evaluating results.
  • Ability to actively influence and drive collaboration with individuals or groups at various levels within and outside of the organization.
  • Ability to provide leadership and direction contributing to the success of the organization through engaging, developing and mentoring individuals and teams.
  • Excellent organizational skills; be able to function under time constraints and deadlines with attention to detail.
