Job Summary*
The Concessions Supervisor is responsible for assisting in the management of all Concession/Catering operations for Bojangles’ Coliseum and Ovens Auditorium.

A. Essential Job Duties:*

  • Maintains optimum standards of sanitation and safety according to industry regulations.
  • Directs procurement, storage, preparation, and serving of food and beverage products offered through the concession stands or food carts.
  • Tabulates Stand Sheets and checks for accuracy.
  • Directs product and equipment relocation to meet demands when necessary.
  • Provides Concessions Warehouse with detailed product and equipment relocation.
  • Works closely with Groups and opening and ending inventories to ensure accuracy and balancing.
  • Assumes the role of Catering/Concession Manager in their absence.
  • Assists the Catering Manager with scheduling servers, posting prepared schedules, assignments and contacting servers for event needs.
  • Contacts client prior to event to understand needs as they relate to food and beverage service.
  • Conducts attendance call with banquet staff prior to event and reviews event agenda for preparation of service.
  • Maintains time records for all banquet staff.
  • Ensures banquet staff is handling, maintaining, and cleaning equipment such as china, glassware, and fixtures properly prior to storing it away.
  • Oversees pre and post event functions for all activity in and around food and beverage prep area, back of house, and public areas.
  • Handles stock, inventory of alcoholic beverages.
  • Handles cash as it relates to alcoholic beverage sales.
  • Carries out all directed banquet service orders as assigned through banquet staff.
  • Ensures the staff preforms set-up and break-down satisfactorily.
  • Assists Catering Stewarding department in determining necessary requirements for back of house needs and time requirements prior to event.
  • Presents banquet bill to client for signature following the conclusion of the event.
  • Trains banquet staff in service expectations as set forth by the Banquet Manager, continually working to provide a safe, clean environment for staff and guests
  • May perform other duties as required.
  • Must be able to work a flexible schedule which may consist of nights, weekends and/or holidays.

Supervisory Responsibility*

  • This person will assist with scheduling, training, coaching, and hiring.

Education and Experience:*

  • High school diploma or general education degree (GED); and two to three years related experience and/or training; or equivalent combination of education and experience.
  • This individual should have knowledge of the Microsoft Office suite; Food Service equipment; and Two-way radio operation.
  • At least 6 months to 1 year of experience in a customer service environment.
  • Ability to operate kitchen equipment as needed.

  • The employee must regularly lift and /or move up to 20 pounds.
  • Specific vision abilities required by this job include close vision. While performing the duties of this job, the employee is regularly required to sit; use hands to handle or feel and talk or hear. The employee is frequently required to stand and walk.
