WHO IS DIAMOND CONCESSIONS?

Diamond Concessions is a food service company that specializes in concessions and catering for minor league sports and outdoor amphitheaters across the United States. Diamond Concessions currently services 9 minor league teams who have a shared focus in providing great customer service and the highest quality product for our partners and patrons.

We are currently seeking an experienced Executive Chef to assist in management of the overall food and beverage operation in Idaho Falls, Idaho at Mountain America Center. The Spud Kings junior league hockey team will play in a new state of the art hockey arena that seats over 5000 guests including 12 private suites, 16 loge suites, and 5 concession stands and the Blue Cross Convention Center.

Job Description

The Sous Chef helps provide operational, training, and managerial oversight for the culinary operations of Diamond Concessions Arena. They also help prepare and cook food.


Qualifications

Culinary degree or equivalent work experience required

Basic knowledge of purchasing required

1 years of management experience in a culinary environment preferred

High volume production experience preferred

Excellent written and spoken English

Exposure to menu costing, inventory, and ordering

  • ServSafe and Food Safety Handler certifications required


Job Responsibilities

Assume chef responsibilities in the absence of Head Chef

Communicate with Head Chef regarding the daily inventory and ordering process

Set up their own station and mise en place to specifications and recipes

Cook and prepare food to order

Properly store all mise en place and submit production needs for following day by shift end

  • Ability to work flexible schedule to accommodate business levels
  • Ability to stand for extended periods of time
  • Requires occasional lifting, carrying, pushing, and pulling up to 50 lb.

Assist with ordering and inventory procedures.

  • Demonstrated commitment to guest service.
  • Ability to communicate through oral and written skills with staff, creating a positive work environment.

Work as an active participant on the service line as required

Assure safe and clean work conditions for all personnel

Help maintain cleanliness guidelines for all kitchen production, walk-ins, and storage areas.

Ability to manage their own time as well as the time of others.

Supervision Given and Received

Given: Exercises general supervision over the culinary team. Assigns a variety of routine tasks, sets general expectations of results expected within companys policies and procedures. Responsibilities include but are not limited to, interviewing, hiring, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.


Received:
Works under general supervision of the Head Chef. Receives continuing or individual assignments according to supervisors directions and may perform routine tasks. Expectations of the quality, quantity and deadlines are clearly set. Instructions, advice and assistance available as needed. Work is reviewed on demand or during scheduled check-ins.


Work Environment and Physical Demands

Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods time. Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces. Must be able to constantly lift, push or pull up to 50 lbs. individually or with assistance.
