Key accountabilities
- Responsible for assisting in directing, controlling, coordinating and participating in the day-to-day preparation and production of the assigned Kitchen.
- Accountable for the production of the products required in assigned outlet.
- Follow recipes for product items accurately and always update them.
- Responsible for the preparation of mise en place for the station.
- Produce all food required for the assigned Kitchen
- Prevent wastage of surplus stock without undue sacrifice on food quality.
- Monitor production level and ensure that leftovers are managed appropriately.
- Look continuously for ways to improve the quality and service and to meet or surpass the required standards of performance
- Ensures that the product is of the highest quality, and that this is continually achieved
- Ensure a high standard of Food quality & Safety at all times
General requirements
- Must be State of Illinois & City of Chicago Food Handler Certified (ANSI Accredit)
- Must have basic HACCP knowledge
- Must have at least 1 years professional experience with Chinese cuisine in an upscale establishment
- Wok experience ideal
- Knowledge in scratch cooking (basic knowledge of stocks and sauces)
- Extensive culinary knowledge in both classical and current culinary trends
