Job Summary

The Regional Chef reports to the Vice President of Culinary Operations. A high level of flexibility is required in the position of the travelling support chef. This position requires travel approximately 75-80% of the scheduled work week. This position will require some weekend and overnight travel and work responsibilities.
Ability to support all areas of the culinary field and Fresh Ideas accounts as needed including cooking, ordering, menu development, food cost analysis, monitoring waste prevention, scheduling of production team members, inventory processes and apply specific culinary training to both non-exempt and exempt team members.

Key Responsibilities:

  • Supports culinary personnel at Fresh Ideas accounts - short term and long term.
  • Demonstrates high level of culinary expertise including day to day operations and the execution of catering events both individually and as a team member.
  • Proficient in ordering, conducting and documenting inventory procedures, food production systems, monitoring food cost and working with online menu systems.
  • Ability to evaluate the overall culinary performance of a team and develop written action plans to use as a guide for desired outcomes.
  • Ability to schedule culinary teams appropriately at the unit level.
  • Ability to write and analyze cycle menus.
  • Demonstrates the ability to train and implement Fresh Ideas culinary standards at the unit level and in group training settings.
  • Demonstrates proficiencies in all aspects of financial management of all dining department resources.

Preferred Qualifications:

  • Culinary degree preferred
  • A minimum of three years of culinary management experience is required
  • At least two years of multi-site culinary management experience is required
  • High volume production and catering experience is essential
  • Previous experience managing cost controls
  • Desire to learn and grow with a top notch foodservice company
